Let me explain
So a arrow in Minecraft does more damage when it's going at a high speed, so when the dragon was going to hit him, he was moving at extremely high speed and he shot the arrow which went at a very high velocity which was enough to one shot the dragon

Basically arrows do more damage the faster they go, and the dragon has knock back and if the player shoots it at the perfect time at the perfect spot on the dragons hitbox (called the tickle spot) the arrow reaches speeds of orbital velocity and does enough damage to kill the ender dragon with one arrow

The I shot arrow works because the arrow goes faster, the more momentum the player has (ie. if you jump whilst shooting an arrow it does more damage) and the knockback of the Dragon gives you a lot of momentum, so much that, if you time it perfectly, it one shots the Dragon. The block placing, I think, is just to make sure the Dragon swoops in the right place

How this trick works is that the dragon hits you, and for a split second you have so much momentum, that firing an arrow at the exact right moment causes it to have so much momentum (or speed or other energy, you get the point) that it deals enough damage to one-shot the dragon

Let me explain. One shot glitch involves using the dragon kb to maje arrow travel super fast and obe shoting dragon. This might sound easy but you have to hit the exact spot on a dragon to work and this spot is big about one pixel of a block

So basically, he used the ender dragons knockback to turn the arrows velocity really fucking fast. Which we all know that arrows deal more damage faster it goes.
