Just a note here. Baking soda is traditionally added before cooking the chickpeas to reduce the cooking time. The teabag is added later, during the gravy-making stage, to neutralize the left over alkalinity from the baking soda (tea is acidic), which gives the gravy its typical color.

Why add baking soda in chickpeas after they're already cooked? It's usually added at the beginning of cooking to facilitate cooking. Could you explain why? Thanks
