We chalk along across all the joist with your running measurement you can cross check your not running out every 3 boards or whatever your comfortable with

Wrong. Run them a little over your line then use a track saw to make a absolutely perfect seam. Rout edge to match if allowed

I lay both at once maybe go a couple lay a string or eyeball my guys call me lazer eye and take measurements to other side common sense

Or run your joists the other way and 1 piece it all the way down. Joints are the ugliest things you can see on a deck. The middle border doesn’t make it look any better
