Ingredients
2 16.9 oz bottles of Chosen foods 100% pure Avocado Oil
Dough
2 cups All purpose flour
1 tbsp ghee
1 tsp cumin seeds
1 tsp salt
¾ cup warm water
Potato filling
2 large russet potatoes, peeled and diced
½ onion diced
2 Tbsp Chosen foods 100% pure Avocado Oil
4 cloves garlic, minced
1 green chile, finely diced
1 inch knob ginger, minced
1 cup fresh peas
1 tsp cumin seeds
½ tsp fennel seeds
2 tsp garam masala
Salt & pepper
Mint Chutney
½ cup fresh mint
½ cup fresh cilantro
½ tsp cumin seeds
1 tsp Tamarind puree
½ green chile
½ lemon juiced
Salt
For the dough, in a large bowl add flour, ghee, salt and cumin seeds. Mix with your hands then add the warm water. Mix and knead until smooth. Form the dough into a ball and spray with oil. Cover the bowl with plastic wrap and let rest for 30 minutes.
For the filling peel and cut your potatoes then add them to a pot. Cover with water and boil with a pinch of salt until tender.
In a large pan over medium heat, add oil then the cumin seeds, fennel seeds and garam masala.
Cook until fragrant then add the onions, garlic, chiles and ginger and sauté until softened 2-3 minutes.
Next add the boiled potatoes and peas. Mix and mash together then season with salt and pepper.
For the chutney, to a blender add the mint, cilantro, cumin seeds, tamarind puree, green chile, lemon juice and salt. Blend until smooth. (you might need some water) Then refrigerate until needed.
Divide your dough into 8 equal pieces. Roll a piece of dough into a 4 inch round. Add a spoon full of filling to the middle. Add water to the edge then fold it like a paper airplane. Fry your samosas at 375F in Chosen foods 100% pure Avocado Oil for 3-4 minutes. Sevre with your chutney.
