~Ingredients~

300 gr oreo cookies
6 tbsps melted butter
700 gr cream cheese
1 cup + 2 tbsps of sugar
¼ cup all-purpose flour
2 eggs
½ cup greek yogurt
1 tsp vanilla extract
½ cup strawberry jam

~Directions~
Grind the cookies into fine crumbs and mix with the melted butter. Preheat the oven to 160 oC. Transfer the crumbs into a springform pan and press them evenly into the bottom and up the sides. The pan used here is 25 cm in diameter. Wrap the pan in tin foil and bake the crust until it sets about 10 minutes. The foil here is to catch any occasional drippings. Meanwhile prepare your filling. Start by whisking the cream cheese on its own for a few minutes to make it lighter. Then whisk in the flour and the sugar until smooth. Add the vanilla, the eggs and the yogurt and whisk until combined. Pour half of the mixture in the pan and dollop half of the jam on top. You can marble it with the help of a spoon. Repeat with the rest of the ingredients. Bake the cake for about 40 minutes or until the top becomes golden. Then turn the oven off and leave the cake in, with the oven door ajar to allow it to cool slowly. After about an hour get it out of the oven and allow it to cool completely before refrigerating.
