Sadly the Sims 4 breeding (for horses and both cats and dogs) does not give you a chance for different coats/furs, it's always either a copy of the mom or dad. Which sucks😢

The Pets expansion in the Sims 3 is a TON better than this. You should check when Sims3 and all it's expansions (or at least the PEts one) goes on sale, as it does MORE than Sims4 horse ranch offers

Could you maybe do a series in Sims 4 where you start a new world then rescue a horse and train them up to become a Championship Rider while expanding your ranch. Its like a kind of Rags to Riches series on Sims 4

idea for breeding! (idea By seri Pixel Biologist!) Once The foal Is Born Go In To cas And Take The Parents colour And write them down in a wheel spinner or some sort of random simulator! and from there go to the first colour spin it and make it the first colour it lands on and so on for the rest, . that way you get unique foals that still look related to the parents

Why would you want to change jaspers hair colour though, hes a perfect buckskin. Palomino x Bay= buckskin (sometimes). Palomino=red base with cream dilute. Buckskin=Bay base with cream dilute. Jasper is the perfect combination of both parents coat colours.
