Karivepaku or curry leaf tree is a big tree looks like a neem tree with lots of health and benefit. Curry leaves gives a good aroma to the dishes when added to the tempering. These leaves are very healthy for eyes and hair fall. We can also make chutney or chutney powder with these leaves and can be had with steamed hot rice and ghee or with a side to idly and dosa . 😋😋
Ingredients:-
Curry leaves:- 2 cups
Chana dal or split chickpea:- 1 tablespoon
Urad dal or white lentils:- 1 tablespoon
Coriander seeds :- 1 tablespoon
Dried red chillies:- 10-12 or to taste
Salt :- to taste
Tamarind:- marble size ball or 2-3 sprigs or to taste
Garlic cloves:- 10-12 or to taste
Asafoetida:- 1/2 teaspoon
Instructions:-
Wash and pat dry the curry leaves.
Heat a pan and dry roast the chana dal, urad dal, coriander seeds till golden. Add dried red chillies and roast till crisp. Transfer the roasted things to a plate.
In the same pan dry roast the curry leaves for 2-3 minutes or till the leaves are crisp. Add in the roasted dal, chillies and coriander seeds to the pan.
Add tamarind mix well and roast for 30 second and switch off the stove. Let them cool down.
Add garlic cloves, salt, asafoetida to the cooked ingredients and transfer all the ingredients to the mixer jar and ground to a fine powder or little coarse powder.
Transfer the curry leaves powder to a bowl or jar.
Karivepaku podi is ready to serve with steamed hot rice or with a side to idly or dosa etc. 😋😋
