The reason why you got about 60 clicks instead of 160+ when using a 1:25 gear ratio is lack of torque. The motor slowed down to increase the torque to Push the spring to click the mouse, which caused less clicks than in theory.

why not just slap these rubber connectors on ends of gear
in fact, that way you can easily get 4 clicks per rotation
and there's less moving parts which means less friction and thus more speed

Fun fact, even if you had something that could click 1000 times per second, it would only click at 1000 times per second if you had a 1000 hz gaming mouse
