The letters are printed on the wax coating, which seems mostly water insoluble. imperfections in the wax allow the water to dissolve the underlying material, but the wax coating remains generally intact until it is released from the the candy and, being less dense than the water, floats on the surface. (amirite?)

There is a shellac coating. Main usage in America is for candy making, to give a shine to candies. But woodworkers know it very well - it's a finishing product. Shellac comes from a bug, therefore M&Ms are not vegan.

Its the hydrophobic wax that coats the M&M's, doesn't dissolve in water but the sugary coating does

After water takes away the first layer which was the artificial coloring, the water is now taking away the second layer which is the letter covering, and this process happens over and over again with each covering layer of the chocolate, until there is no more layers of covering, it'll be just the chocolate alone.

I have no idea why, but my jaw dropped and I felt horrified when I saw the M's separate like that. It makes me feel like there's something gross about it for some reason and I'm like WHAT HAVE I BEEN PUTTING IN MY MOUTH ALL THESE YEARS?
