You forgot that you can't walk on grass paths because you're walking on a dead organism, you can't cut down trees because bees live there, you can't drink most potions because they use spider eyes, you have to make your avatar into an animal, and you can't make a bowl using spider string because it harms the spider.

You can just play on peaceful to avoid mobs, would make the 'vegan' run easier. Also, I would argue that shearing the sheep is fine, since Minecraft sheep can grow their wool back nearly instantly, you aren't hurting them. I think there are some breeds of sheep that practically have to be sheared, otherwise the hair will just keep growing and cause them discomfort (caused by humans breeding them for that specific trait).
