No stirring!!! A candy thermometer is the key to success and keep it low. You can have a cup of water next to you with a brush and brush down the sides of the pan. Of the crystallized sugar on the side of the pan gets into the mixture it will crystallize. You can add corn syrup to help with that tho

Hey hun I make candy at home frequently couple tips leave them if you don’t want them but I’ve noticed best results when you mix the sugar before hand and just don’t touch it while it boils and never scrape the edges this one was hardest for me cause it’s habit lol but using a damp cooking brush won’t disturb the crystallization if you feel the need to scrape and lastly try to keep the thermometer off the bottom of the pan it’s touching the metal so that’s the temp you’ll get instead of the temp of the liquid, good luck!!!!

Something my mom taught me that honestly seems to work if your carrying a full cup, look away and sing your abcs. Rarely spills lol.

That measuring cup is for dry goods. Use a liquid measuring cup. It has room above the 1 cup mark and a spout for pouring.
