Because its what the suit represents, each hero has what they represent in their own stories like how Batman has a bat theme because he fears bats. If a hero is about being a normal person then no suit.

The Fantastic Four actually didn't have costumes for the first few issues. In-story, Sue designed them. Ben's first costume was even a full body suit (like the others) with an optional helmet, because she knew he wasn't comfortable with his appearance.
