I never understood why HIMYM portrays Argentina as such an absurd Central American stereotype. But I've come to realize that Ted is the narrator, and he never went to Argentina, so he doesnt know what it's like, therefore he's exaggerating what he imagines her trip was probably like. In fact, he might be mixing up the country, with Costa Rica for example. He often makes mistakes in the show, mixes up names, and years.
