Here is a basic brine recipe that you can use for chicken, pork, turkey and other meats. This brine is a simple combination of salt, sugar, and water and is great at adding both flavor and moisture to meats. Brined meats are also usually more tender. I almost never cook pork or whole roasted chickens without brining them for up to 8 hours before cooking.

Peppercorns, whole garlic, anything not crushed are what I consider passive flavorings. Like dropping a whole lemon in a cup of water. You won't get much taste if you don't reduce your herbs to smash or just lightly dice or crush

Yes...but it's hard. 24 hrs even would be fine.

When I brine a 15-20 lb Turkey I was told to use 1 gallon of water 1 cup of kosher salt and 1 cup of white sugar and put in frog over night does this sound good?

If you cook a chicken in a covered roaster it doesnt need brining. It wont dry out as the liquids are not boiled off. Turkeys are similar.

Why use kosher salt if your just going to dissolve it in the water ? I just don't know the difference

What is the longest time to safely brine? ....(say someone left it 2 days, happened with my buttermilk chicken brine once and it was to die for!))

Anyone ever use hot water when making kool aid? Dissolves just fine in cold water.

Why would you add hot water and then ice cubes when you can fully dissolve the sugar and salt into straight tap water? Also, there is absolutely no need to use kosher salt. Just ordinary plain cooking salt works well and is much cheaper. If you add peppercorns, you need to let them marinate in the brine for at least 12 hours before putting the meat in otherwise the flavour has not fully entered the brine and you have wasted your peppercorns as well.
