this is actually a huge thing in game design, thats why your jrpg feels so overwhelming on occasion

Not that I can think of. I try and go over my options as fast as I can and keep the best one so far in my head. For things that dont really matter I will just compare price and go cheapest. For clothes I just try and pick what is comfortable and affordable. I dont think having many options makes me unable to choose as I am pretty confident in I know what I like.

It makes sense that it's easy to make a choice when there are so few. But it doesn't account for quality. Nowadays, this is being used by people selling you stuff. They would have set courses meals in a restaurant or sell only one dish in a stall and people go, "they only sell one products so it means they do it really well" when it's not really causation.

Choice overload is a myth. If there's more information to work with, you'll need more time to digest the information. Also, when there's 10 times more information, people don't generally take 10 times longer to make a choice. They take 2 times or 3 times longer, which is actually highly time efficient and it indicates that overload is not happening.
So it's not choice overload, it's just an inefficient presentation of information.
Before being presented with all of the information at once, people should get a simplified menu from which they choose. After that they could get to see the larger menu if they so please, as knowing that they've already made a choice will make it easier for them to either pick something different or not.
