Lomo Saltado

Originating from the Chinese/Peruvian (Chifa for short) fusion of foods; Lomo Saltado has become one of Peru's most beloved dishes.  This dish uses Peru's love of potatoes, and China's love of stir fry to create a wonderfully savory, satisfying dish.  If you have never had Lomo Saltado I encourage you to try it. 

For this recipe, I've chosen to do a simple version, that can be modified easily, and made fairly quickly.  I hope you enjoy!

INGREDIENTS:

½ pound steak (Typically sirloin but you can use what you like)
1 onion
1 tomato
1 clove garlic minced
1 tbsp olive oil
1 tbsp aji amarillo paste
1½ tbsp soy sauce or to taste
½ tbsp red wine
Pinch of cumin 
Salt and freshly cracked pepper to taste
Cilantro to garnish

Cooked rice
French fries (frozen french fries work great here)
