As an archaeologist : those are mundi maps. They’re not designed to accurately portray the world in a concise manner, like the maps used by navigators of the time, they’re for spiritual purposes. They’re designed to be “maps to salvation”, and are just as likely to contain unicorns and mythical countries as anything real. We can’t use them as a basis for locating anything, because that’s never what they were actually for
