Pasta Amatriciana is one the 4 OG Roman pastas and for a lot of people its their favorite! It looks like a standard red sauce but the flavor is so much deeper and really something you should try!

Try a 7 inch carving fork as your tool to roll your pasta, and you can use the tweezers instead of your finger to move the pasta off the fork.
