(Rewatching because it's 3:45 am in England and I'm bored)
I think the way the chords register in this game are messed up, like if you have to strum real quick then change to a different chord it doesn't register in the game sometimes and fucks your percentage up. I don't think it's a matter of you being slow when changing chord shapes I think the games weird like that
