Geoff, those cookies and softened ice cream looked great. I think it's wonderful they created gluten free cookies that taste so good. As a kid our family went up to York Beach, Maine in the summer and there was a place there that made unbelievably delicious large soft chewy chocolate chip cookies and they'd put a thick amount of vanilla ice cream inside. They were to die for.
