The Vietnamese mayonnaise is actually an aïoli - also referred to as Le Beurre de Provence - hence the Vietnamese often refer to the mayonnaise as Bơ.

Ok can you tell me why mine keeps coming out oily or like a weird custard? My 4th attempt is better but is it because once fluffy I should stop adding oil? I do 3 egg yolk to 1 cup but saw that when adding the last 2 tsp the consistency I see yours and others start being weird

Why garlic powder? Why dont you add fresh garlic at beginning or blend it?

Does the egg yolk have to be kind of cook? Just the thought of eating anything raw egg related scares me a little because of salmonella.
