Cake decorating instructor,Liz, demonstrates how to make Decorating Buttercream Icing

Royal Icing



3 eggs whites room temperature

1 pound powdered sugar (confectioners)

1 teaspoon cream of tarter



Combine ingredients, beat at high speed 7-10 minutes.

Dries quickly-keep covered.

DECORATING BUTTERCREAM



2 CUP SHORTENING (SWEETEX)

1 CUP MILK (CANNED evaporated MILK IS GOOD TOO)

2 TSP VANILLA

1/4 TSP. ALMOND EXTRACT

½ TSP.BUTTER FLAVORING

3 LB. POWDERED SUGAR

2 tsp. salt



Mix together and beat 10 minutes until light and fluffy

Will keep in refrigerator for about 2 wks. Is enough

To ice and decorate an 8 or 9 inch double layer cake.

You can cut the recipe in half if you don't need that much.

Hi Helena, this is actually a studio kitchen. A set just for the videos. I got tired of the mess in my kitchen so I we turned another room into this studio:)

Hi Pinks, I have never tried that, but I think it would be pretty comparable. My only guess would be a little richer flavor. I know adding the canned milk definitely does that. Thanks Liz

HI Kazy, for buttercream you have to have some sort of shortening. Many recipes use butter, Crisco, or other vegetable shortening. I recommend Sweetex for the borders and flowers so they hold their shape. Thanks Liz

Hi Aleta, I stick wit one type of icing for icing and decorating usually, Unless I am using creamcheese icing. then I use decorating buttercream for decorations due to stability issues. I use the decorating buttercream for writing and I don't thin it. However if you want to thin it just add a little more milk, by the 1/4 teaspoon. Thanks Liz

Hi Fatimah, this Icing is specifically for decorating, so it will hold it's shape for flowers and borders. It is a sweet icing, but delicious. If you want to decorate with something not so sweet, you could use a product like, Rich's bettercream or Pastry Pride Whip topping.

Hi Damaris, good question. Yes you can use cocoa powder or unsweetened bakers chocolate. Mix cocoa powder with powdered sugar, or baking chocolate (melted) with shortening. Happy Decorating! Liz

Hi Jake you can use all butter for "buttercream" I don't know that I will work for flowers though. I would go to a local cake shop and ask what they are using for shortening. This might be the best way to find out what will work in the UK. It's probably called something else.

In the video I think I just used regular milk. If you want to use canned, then just evaporated milk. Thanks Liz

Hi Glenda, try a cake supply shop or Smart and Final. Or Some online stores sell it in small quantities.
