Going grain free does not mean we should be deprived of crispy crackers. These Keto seeded crackers are healthy and so crispy. They can be eaten as snacks or with plain yogurt as they are the best alternative for regular granolas. They can also be eaten with low carb jams or as sandwich such as smoked salmon, tuna, chutneys etc. And if you used to love to dip regular crackers into coffee, you can do the same with these seeded crackers. This recipe makes about 30 squares at only 1.7 gram net carb each. It's super easy with just a bowl and spatula and minimal cleaning. Can't ask for more!

INGREDIENTS
2/3 cup flaxseed meal
2/3 cup each of pumpkin seeds, sunflower seeds, chia seeds, sesame seeds (black & white)
1/3 cup chopped walnuts
1/3 cup chopped pecans
2 tbsp ground psyllium husks
1 1/2 to 2 tsp salt
Low carb sweetener to taste (optional)
8 tbsp olive oil
2 cups boiling water

DIRECTIONS
1. Mix together all the dry ingredients in a bowl with a spatula, then mix in the oil and lastly, the hot water. It may look runny initially but let it rest for 1 to 2 minutes and it will thicken up.
2. Spread thinly on a baking tray with parchment paper.
3. Bake on lower section of oven at 170 C or 350 F for about 30 to 40 mins. After about 15 minutes in the oven, remove and score them into squares with a knife or pizza cutter. Return to oven and continue baking. Once they start to brown, turn off heat and leave in oven to dry for about 15 mins. The crackers will continue to brown. If they're not dry or brown enough, just bake them a little longer.
4. Remove and carefully break them up nicely. Let cool and store in airtight container.
