Best advice is buy a bunch of cheap knives and sharpen all once a month. Use the bench grinder to thin the edge then finish off sharpening with a whetstone. Takes 2 min also ffs dont wear gloves wen using a bench grinder

Don't.

There are some special wheels for this granted, paper ones. However you should not use an aluminium oxide wheel for this, the heat produced will just wreck the blade no matter how often you quench it. Grab a diamond stone to remove burrs, then use either waterstones or oil stones to slowly hone a fine edge. It takes longer but it will produce a finfer edge and your knives will last longer.
