Wasn't planning on watching the whole thing, but then I watched the whole thing.
Loved the balance of spontaneous creativity, the occasional successes from just moderately winging-it, but also throwing in the towel and eating 2 trays of tortilla chips for dinner.

For anyone who's interested in cutting out meat or simply eating less of it and are worried about anemia, here are some suggestions for good vegetable/non-meat sources of iron:
Oats - 100g has 38% your daily recommended intake (and it's cheap)
Chickpeas - 100g has 22% of your daily recommended intake (also very cheap if you buy dried)
Lentils - 100g has 25% of your daily recommended intake (again, cheap)
Black beans - 100g has 16% daily intake

You can use fortified nutritional yeast as a source of vitamin B12, or you can eat eggs if you're not going vegan. There are a lot of options out there.

This is a non-exhaustive list, but these ingredients are easy to find and inexpensive. Indian food has great examples of nutritiously complete vegetarian food as well.
