This Meal prep peri peri chicken is actually my new obsession. Look at how tender it is!! It’s crazy how it doesn’t get dry even after freezing it for a few days! Here’s how you can make it 👇🏾

🍗5 servings (138 calories, 32 G protein each)

🍗For the chicken marinade
•500 g raw chicken breast
•1 Tbsp (15 ml) vinegar, soysauce and vinegar.
•3 and 1/2 Tbsp (50 ml) peri peri sauce
•1 tsp mustard
•1 Tbsp garlic
•1 Tbsp canola oil
•1/2 tsp black pepper and chilli flakes.

For the vegetables
•Vegetables of your choice. I chose 1 whole cabbage, 2 capsicums and a carrot.
•Salt and pepper to taste
•1 tsp vinegar, soy-sauce and hot sauce.

🍗Method
•Marinate the chicken and let it sit for just 20-25 minutes. It doesn’t even need to take that long!
•Cook the vegetables in the mean time. You can literally choose any vegetables and spices.
•Air fry (or pan fry) the chicken for 16-17 minutes at 180C. I’ve tried pan frying and it works just as great. There’s no need to add any oil to your pan as the chicken will release its own juices and cook in it. Make sure to not overcook though!
•Divide into 5 portions. Store it in the freezer and consume it within 2 weeks of freezing. Simply defrost it when you wanna eat it. You can serve it with any carb of your choice. Enjoy!
