I work at five guys. I'll tell ya a few things to be more accurate. The cheese is real cheese, when we prep meat we don't even them on top of each other. We even individually then stack. We don't put any oil on our grills, they're non stick grills. If we do mayo an ketchup it goes mayo on top bun, ketchup on bottom. Never together on the same bun. An make sure to only even the patty on the grill one time, after it becomes half grey up to the middle.

Worked at Five Guys. Burgers pressed individually and stacked. Then place on stove, press extremely thin as soon as it it hits. It'll get grey when ready to flip. Flip twice overall. 3 zones at the restaurant. Raw middle and final cooking areas of the grill. Mustard and onion and mushrooms go on bottom bun after buns are toasted if ordered. Mayo can be top and bottom. Stack with great condiments and learn how to make the fries. Idaho potatoes always. Soak and rinse in cold water to renove starch. Take out and let drain for a few minutes. Five guys has 2 cooking phases. Pre cook and final cook. Fries are immaculate. Cook in peanut oil. For pre cooks, put the fries down for a few minutes and watch for the color change and texture/consistency. Take out and let stand 5 minutes minimum. Then put back into peanut oil until crispy outside but mashed potato inside. Squish one with your fingers. If it breaks, it's underdone. If it stays intact but is still crunchy yet soft, its perfect. Overdone youll know by color and taste. Quality checks on fries are done daily.

so youre right about the 80/20. and the smashing. but before we start the lunch rush we coat our flat grill in bacon. and use that residual bacon grease for our burgers.

with condiments. ( Bottum Bun) we go two rings: ketchup
one ring: mustard.
mayo spread on both buns.
you can also use the mayo to toast the bun.

the KEY: you have to smash that burger as thin as paper SOON as you lay it on the grill.

cook7- 8 minutes. 4 on each side. lay that cheese on top and then take it to the bun.

what seperates the taste of a five guys burger from anything else is this.
cheese - kraft singles
bbq - cattlemens
ketchup - heinz
mustard - heinz
mayo - dukes
A1.
and the best beef you can find.
for the buns Im sorry but they have a private bakery (masada bakery) so find the SOFTEST buns in the store you know.

once you assemble the burger wrap the burger in aluminum foil it causes the burger to keep its residual heat and those cheese and condiments to mix.

The meat is off... 60% 80/20 chuck, 40% 90/10 sirloin. The meat is all ground together and comes prepackaged to each location.

You should also do a copycat of their mushrooms, I’m not even vegetarian but I’ll still order their mushroom sandwiches over their burgers sometimes.

What's 80 - 20 Beef chuck? I know chuck but what is the 80-20? Is that the protein to fat? And if it is, how do I know if its 80-20 pls answer!
