Check out this Mini Egg Cookie recipe! I used Cadbury's Mini Egg's in mine but you can use anything you want, M&M's, cranberries, raisins, the list goes on!

The are soft cookies with a crispy edge just like subway cookies!

What tasty food have you eaten today? 🥰

Ingredients:
115g unsalted butter, melted
150g light brown sugar
115g granulated sugar
1 large egg
1tsp vanilla
180g plain flour
½tsp bicarbonate of soda
½tsp salt
120g mini eggs, whole and broken
100g dark and white chocolate chips

1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan)

2) Add the butter and both sugars to a large bowl and whisk to form a paste.

3) Add the egg and vanilla and whisk until smooth.

4) Sift in the flour, bicarbonate of soda and salt and fold them in to form a dough.

5) Fold in the mini eggs and chocolate chips.

6) Refrigerate the dough for 30 minutes minimum.

7) Scoop the dough onto a cookie sheet in 2tbsp balls about 2" apart.

8) Bake for 8-10 minutes.

9) Enjoy!
