As someone who works in a kitchen, that idea is the most sensible and stress free idea. Cooks and servers wouldn't feel rushed to do their jobs and servers can get their duties done as well without worrying about people coming in.

Where I live it is very common for restaurants to have a "kitchen open until X" rule in addition to the opening hours. You can still come in, but only for drinks.
(One of my favourite places will sometimes hand out whatever is left from service to the late guests as a snack, but there's no guarantee and you can't choose from the menu.)

My families go to Restaurant did something similiar. Kitchen closed 9pm, Floor closes at 10pm. If you haven't finished your meal by 10pm (with a bit of lenience of course) you are offered to take the rest to go but you do have to leave the restaurant. I grew up thinking this was standard and was quite shocked when I learned that it isn't.
