I think the best we'd be able to do is to climb back up to a medieval level of tech. There would be some outliers, small sailing boats that are more advanced than that level but that would be it. Then most the knowledge would be lost, we wouldn't be able to make the tools to make the tools that we'd need in our depleted world to get back to where we are now. That would be it.

Your ending is pleasant but I suspect it will be more like The Walking Dead with factions of small groups going at each other trying to get the upper hand. Hopefully libraries survive which will be a huge head start but I think they hold maybe 10% useful information that would help in this scenario.

Something that would be essential to rebuild our WORLD would be a usb drive that some Asian scientists have created with all the wonders of the world and some basic information to rebuild society. That usb drive is been locked to a bunker that ( I think ) will open in the end of the world. I remember seeing this from a trusted source but I can't recall it. Also if they haven't prepared a machine to show the information, it may take up to hundreds of years to create the exact technology so we can read and see the plans of/for ( buildings, society, living and knowledge )
