#TBT One of the coldest grilling days in memory, throwing down for a buddy’s birthday—serious lineup on. Nearly two full bags of charcoal just to keep things cooking in sub-zero temps!

APPETIZER:
Yakitori-style chicken thighs, skewered and grilled over charcoal, brushed with a homemade teriyaki glaze. No lid on the grill meant the top side kept trying to freeze, making the charcoal work overtime. Three rounds of party apps kept everyone busy.

ENTRÉE:
Wet-aged Prime NY Strips and their 60-day dry-aged counterpart, served with chimichurri, fresh French baguette, and a brown butter herb sizzle platter—plus a little leftover teriyaki glaze from the skewers 👀

LATE NIGHT:
Pineapple chipotle pulled pork taco bar at midnight to soak up some of the drinks. Charred pineapple salsa was a must alongside guac, pico de gallo, chimichurri, coleslaw, sour cream, shredded lettuce, black beans, cheese, flour tortillas, and hard shell Stand ‘n Stuff tacos. 🍻

Buddy, iI tip my hat to you!!! It is hard enough to cook 3 steaks at once, you cook 5 different meats and tons of it. I would LOVE to take a class on how you plan, prep and execute!! Cheers man!! Well done!
