🍰Banana Walnut Loaf Cake🍰
Ingredients:
3 overripe bananas
120g coarsely chopped walnuts, plus 25g for the cake toppings
80 ml vegetable oil (I use rapeseed oil)
1 egg (large size)
100g brown sugar
1 tsp vanilla extract
190g all-purpose flour
1 tsp baking soda
1 tsp baking soda
1/2 tsp salt
Instructions:
1. Preheat oven (170°C).
2. Prepare walnuts by coarsely crushing them.
3. Prepare the bananas by peeling and mashing them in a mixing bowl.
4. In a mixing bowl with mashed bananas, add oil, egg, sugar, and vanilla extract. Mix until creamy.
5. Sift in flour, and add baking soda, baking powder, and salt. Mix well until fully combined (do not over-mixed)
6. Add walnuts and combine again (do not over-mixed)
7. Grease a 9x5 inch loaf pan and line the bottom with parchment paper
8. Pour the batter into the pan and evenly distribute the walnuts on top
9. Bake for 45 to 50 minutes or until a toothpick inserted into the cake comes out clean.
10. Remove the cake from the oven and let it cool down
11. Transfer the cake to a serving dish and slice into your desired portions.
12. Serve and enjoy💕🌼
