You should check out Nuclear Option! It's more of a combat flight sim, but it has fantastic physics and gameplay!

il-2 Sturmokiv: Battle of Stalingrad has really good crash physics, imo better than War Thunder

il-2 Sturmokiv 1946 came out in 2006 and also has really good crash physics for coming out during that era

Microsoft Flight Simulator 98 used to do it better at least. The image would freeze and then you would hear an epic crash sound for several seconds 😅
