How to Make Traditional Chinese Mooncakes Mid-Autumn Festival Recipe

Happy Mid-Autumn Festival!

This year, the Mid-Autumn Festival falls on Sep. 13th (the 15th day of 8th month in lunar calendar).
Sofia is trying to learn how to make the traditional Chinese mooncakes and share with you guys the recipe!

1. Make the Dough
140g golden syrup = 糖浆(táng jiāng)
4g lye water = 碱水(jiǎn shuǐ)
40g peanut oil = 花生油(huā shēng yóu)
220g flour = 面粉(miàn fěn)
You may add less syrup if you don't like it too sweet.

2. Prepare the Filling
For each filling:
25g red bean paste = 红豆沙馅(hóng dòu shā xiàn)
a half of salted duck egg yolk = 咸蛋黄(xián dàn huáng)
You can use other paste, like purple potato paste 紫薯馅(zǐ shǔ xiàn), but red bean paste plus salted yolk is the most typical filling for traditional mooncakes.

3. Make the Mooncakes
For each mooncake:
20g dough + 1 filling

4. Shape the Mooncakes

5. Bake the Mooncakes
Oven 170 degrees for 5 mins
Brush a little bit of egg yolk liquid (egg yolk + water) on the top of the mooncakes.
Back to the oven for 10 mins
