i start very early in the morning wash off my turkey, remove the gizzard/heart (i make my broth with these and the neck) parts and slather turkey with unsalted butter. i then add savory spices.. i put it breast side down and i put water in my pan. that way it has a warm bath throughout cooking. the dark meat is the most fat so it cooks and drips down on the white meat and encourages the meat not to dry out. i also use a slanted rack in my roasting pan. once it has been cooking on a low heat for about two-three hours i baste as i go. i do not cook turkey for looks, i cook it for moistness. plus i like the dark meat to be roasted more. always cover with a foil tent loosely.

My Turkey gravy was fantastic, I didn’t even have to flavor it, but the thermometer reached 160 in an hour so I had to remove it and use a different one. I probably did something wrong.
