Hello I am am an Older gentleman Farm born and raised. My mother was an avid canner and as you have said many times on your videos a Rebel Canner although the term didn’t exist at that time. We the kids would always help at harvest time and would do allot of the prepping work and that is how I learned to Can and do it the same Today! Anyway love your enthusiasm and your energy in bringing the Old ways back in your Videos.

I fully agree. I was pretty young when my Mennonite grandmothers were too old to teach me to can. So having a Mennonite mother in law to help get me started 7years ago, was such a blessing. Not only was it touching to have her teach me, I feel like I’m carrying the family tradition, that my mom never took interest in. God’s paths are never wrong, we sometimes go through tough times, just to prepare us for who God is shaping us to be. I’d be lost without His guidance and love and strength and grace.

Leilani it’s worth repeating, you are so inspirational to me. I’m 55, mother of 7, and was definitely born for this type of skill, but never exposed to it growing up. My great grandmother on my dads side was a huge influence on me, but sadly I didn’t grow up with her due to a divorce. Two years ago I got chickens, and this past spring I planted my first garden. I just started canning and it is so rewarding. Thank you, thank you, thank you. Lastly, and please don’t anyone take offense, it’s so awesome to see a fellow Latina teaching these skills. There aren’t many Latino homesteading/canning channels. Unless I’m missing them 🤷🏻‍♀️

I just sat down from prepping food for my new dehydrator. It’s a Septree off of Amazon…..I love it’s all metal no plastic and has 10 trays. It’s square so easy to tear off parchment paper and put on the shelves.
I started watching your site because of Rachel from 1870 Farmhouse saying what a joy you are….You are the daughter with me talking to me as I work in the kitchen….I have four daughters and a daughter in law…..also many granddaughters and NO one is interested in the old time cooking techniques…..🥲They’re obsessed with coffee from the coffee shops, organic smoothies and food from a organic restaurant.
When I tell them how I make my own powders, dehydrated foods, breads and I make tinctures and I can but they say “ they don’t have time” it’s more important to go out to lunch, work out at the gym and socialize .
I feel so alone. I’m 75 and my years to be around are shortening. I sew, crochet, woodwork, garden, fish and camp. I have a art studio and a pottery studio.
I live 40 minutes from most of them but it’s too far but if I would move closer to them then I’d see them more….not happening…..I have 31 acres of freedom. I make things from the woods like pine wreaths with pine cones and handmade ornaments…by myself….

So I turn your channel on and I pretend you are working in my kitchen and talking to me…..my husband is at work but when he comes home from building log homes at a million dollars plus that people are buying to get out of the city, he’s too tired and doesn’t share a lot of what I do….he thinks I’ve over prepped in canning and dehydrating but a year or so from now all that is what we will have to sustain us I’m sure.

I'm sorry I missed this live, but I try to catch up whenever I can! Sometimes I forget that I'm 67 and I do things that leave me exhausted! and forget to turn on the internet! To my mind, you're a superwoman. Never think you're chaotic! You're doing your best to attend to your family and to us, for which we are grateful! In my experience, people who have a perfectly tidy house, are those who only think of themselves and only focus on their house. People like you are treasures who are willing to make some sacrifices for the benefit of others. May God bless you always and remember that you "can do all things through Christ who strengthens"you. Plant those root ends and they will GROW!!

I grew up with a Mom who hot water bath canned EVERYTHING. Mom passed in a car accident 44 years ago. I haven't canned since, until last year, my daughter wanted to learn to can. Easing in, we started with Jellies...

My grandmother taught me to can food. She taught pressure canning and water bath canning. My family didn't know store bought breads, jams and jellies, nut butters, fruits. Pickles etc etc. Later I started making my own cheeses, sausage. I mostly stopped with the empty nest syndrome. With what is going on lately, I started canning snd dehydrating again

Having 4 son’s and a husband and hating to decide what we were going to be eating every day. I decided we would sit down with the calendar every Sunday. They would then take it in turns to decide what we would eat each day of the week. That way everyone had their chosen meal it was never my fault if there was something that was not a favourite and I was happy because I never had to decide what was going to be eaten. This system worked very well for us for many years.

Love canning and you have been the one that has taught me and inspired me to set the fear aside and man on man I have been really diving head first and heading all of your advice and guidance. Great job doing a live! Your very relatable to my life scene right now, learning and just “make it make” as you’d say. May I suggest saving all your veggies scraps in a freezer bag and accumulating it for when you do your next batch of stock. Celery ends or limpy celery left in fridge drawer, carrot ends or peels, onion peels outer skins, garlic peels/ends, herb stems etc anything That is a scrap you’d otherwise compost and could use in the type of stock your choosing to make. I tend to freeze my chicken carcasses to save enough for a big batch of stock… and for when I feel like doing it 🥴

I, too, am a homesteader at heart, but we live with my widow MIL to make sure she is taken care of. It's a bigger sacrifice than most will ever understand for a wife and mother, but it is where the Lord has us until He is ready to move us to our own homestead.

I keep all my
Veggies scraps to put in my broths. As I peel carrots, celery, onions, I keep the ends and the peels and keep them in a ziplock bag in a freezer and add to it as I use veggies. When I make my stock I take out my bag of scraps. And that’s what I use. I never use fresh vegetables for broth or stock. I filter out my broth at the end and all the scraps used for my broth now go in my compost. No waste. Lol.

I keep a baggy in the freezer and put clean tops, roots, skins in it. I actually ONLY put that in with the roti chicken carcass for stock. Free food!
