Known as corn smut or huitlacoche, what many farmers see as a disease has been enjoyed in Mexico for years. Even though it doesn’t look very appetizing, this fungus is a popular delicacy in Mexican cuisine.

In fact, some farmers deliberately inject edible fungus into their corn to grow it. Later, these oddly shaped, fungus-covered corns sell for several times the price of regular corn.
