303 is closest to the 404 and the MicroKorg is musical butter. Belongs in almost any setup and just makes things so much fuller and creamier.

my set up rn is basically 2C (PSR6 into a 404mk2 which exclusively uses 303/404 sim)

I would go 3 C. I'm familiar with MPC, but curious for SP.

1 A. The original DX7 was awful to program so I'd go with Dexed ( it's free ) and sample it back to the MPC
