As a butcher myself you can hear the correct sound sharpening a knife should make as well. Some may disagree, But this chap is doing it correct. You can hear also by the sound. It sounds of a glide rather then a drag of the knife on the steel. 👍

He is so right that some tasks are best done by a professional. I have heard so much stuff about sharpening, and the rods, and I finally understand what they are for. The knife has to already be sharp and just need a touch up.

Sliding a knife along a honing steel towards your hand seems like a good way to greatly increase the risk of injury. The safer method is to plant the end of the honing steel on a cutting board and to aim the honing strokes away from your hand, towards the cutting board. It's also important to note that a honing steel (or, honing tungsten rod) doesn't sharpen the blade; it merely realigns it). For sharpening, you need to use a whetstone.

I remember my grandmother always used a steel every single time she used a knife. I asked her why she did that, and she handed me the knife and told me to draw the blade across a tomato, it didn't break the skin. She had me draw the blade on the steel, a few times on each side, I tried to cut the tomato again, and it was effortless, like cutting softened butter!

Honing a knife is a must to learn as a chef but so is that monthly sharpen on a stone but nice video did learn a couple tips on honing rods and choices to make on types

I sharpened knives professionally for 20 years as a mobile sharpener for a major grocery chain (my own business). Prior to that I worked as route driver and salesman delivering sharp knives and picking up dull ones, along with food processing supplies, Foodservice, corps institutions etc. Had 15 years in foodservice under my belt before that. I was known as the "KNIFE MAN" those knives if you notice are "Hollow Ground" without going into grinds and techniques, the edges on those knives are extremely thin and easily brought back to a sharp cutting edge. I do agree with the method presented using the steel, (you are not sharpening the knife, really you are aligning the teeth to straight) providing you have a knife already having a workable edge present. Clear cut demonstration, no nonsense approach. Cheers!

Good video. Sharpening a blade is a bit of a challenge with a whetstone but you can buy angle guides and with a bit of practice, you can get it razor sharp. Don't be afraid to try.

This is one of the few videos on knife sharpening on YT that deals with reality when it comes to knife sharpening. The ordinary home user does not use a knife enough to develop and maintain the skill set required for manual knife sharpening. Either do what he says, or get a sharpening system (I use Lansky) that holds the correct angle while sharpening. The steel may be fine for some, but I’ve used the Füri Diamond Fingers for years to maintain a sharp edge.
