I have a tip to use Aquafina for your cakes to get more fluffy as they would be with egg. Aquafaba is the liquid in a can of chick peas and it gets fluffed by mixing it till it forms peaks then fold into batter.

Instead of boiling the garlic you should bake it with oil in tin foil so you don’t lose the garlic flavor plus it taste soooo good

I've even tried adding lots of baking powder to gf cake/bread to get it to rise or more spongy but it makes it crack and dry on outside

Try the oreo cake again but this time in a mug, crush up whole oreos and add a dash of milk and nothing else. Make a dough in a mug and microwave it for 1-2 mins. Eat it right out of the mug you'll love it!

Maybe you yogurt (curd) as fluffy alternative to egg.. as you are vegan use vegan curd 5:10
