It appears the colors have more depth on the Xbox version.

The reason why the Series X has better colours in 120fps mode is because it can output higher bandwidth (40gbps vs 32gbps) meaning XBOX will output full RGB 444 picture @ 10 bit whereas the PS5 has to convert to YUV422 @ 8 bit. However, play both in 60fps mode and its match as both output RGB 444 10-bit. To get RGB444 10-bit @ 120fps on PS5 you have to output 1080p in the console settings.

It is clear that the game has been optimized for ps5 to compensate for the difference of 2 teraflops of xbox, so the depth and lights are slightly more optimized on ps5.
