I think I know why the cables are black-red. In the anime, the EVAs are plugged to power cables, supplied by Nerv. So the power components being Nerv-themed makes a weird kind of sense.

the psu and cables are themed, remember they power the eva's with giant red extension cords coming from Nerv HQ

the case of the PSU is the same that kaji use to deliver Adam to gendou, a thing was around ep 8, the first episode that asuka appear

I'm a simple man, I see Neon Genesis Evangelion I press like.
Also, that build is sick AF. The cables without the combs are actually better for the reason that Evas when are not in combat are submerged in synthetic amniotic liquid with several cables dangling from several monitoring points in their external armor and the cables being loose kind of captures that detail. (If that was an intentional detail or not onIy Asus knows, but its at least a fortunate accident), I actually prefer it like that...

Ughhh man, I’m so jealous of this build. Here I am with my basic ass MSI Eva PC thinking it’s cool, then see this and now I’m sadder than Shinji crying to himself in a fold up chair. Looks seriously cool!

The weird thing about the Evangelion PSU and PC (vs the Gundam PSU and PC) is that you don't need your mother's soul to get this running.
