I saw more "it's typical for Turks to complain" comments, than Turks actually complaining. Just saw them praising him and given their recipes. Btw it looks amazing, and I'm going to try it out. This keeps Turkish cuisine alive and evolving. Thank you coming from a Turk.

Turkish here. This is actually one of the most accurate Turkish dish recipe i've ever seen on YouTube Shorts. But i need to say just few things: We actually cut tomatoes a bit thinner. You can even use tomato sauce which is made just for Menemen. And we don't put cheese on Menemen so often, but that is okay; cheese is cool. You can also put some thin sliced onion inside that, but this is optional too.

Im turkish and ive also witnessed it lol, i can confirm. I’d also like to add this can be made with thinly sliced onions as well. And also, if you dont want the texture to be like a scrambled omlette, you can add the eggs not scrambled, and then stir it after its in the pan

1. Not a big deal but we usually peel the tomatoes.
2. Onions are optional, I think it's better with onions.
3. Cheese is not a main ingredient for this dish, but we sometimes use it just to add a different flavor.

As a Turkish guy I want to share my way of making it, including a few tips. And I don't claim that my way is more traditional, I just like it better this way, it's more creamy:

1- Start with some sort of oil, you can add a little butter too, but I prefer not to, because I'll be adding it later. First add some thinly sliced or diced onions. After the onions have changed color add the sliced paprika/pepper.
2- When the pepper is almost done, add the spices. I love to add some paprika powder, black pepper and chili flakes. Let these spices roast with the veggies for a few seconds. Don't add any salt yet!
3- After that add your tomatoes and indeed smash them a little when they are cooked. If the mixture dries out fast, you can add some water.
4- Add the eggs separately. First put in the egg whites and cook them on low heat until there are no runny/jelly bits.
5- Now it's time to add the egg yolks. Therefore put the heat on the lowest or take the pan off the heat. You don't have to wisk the yolks, just drop them in the pan. Put a small piece/slice of butter on top of each yolk and add salt.
6- Now on low heat mix the yolks with the rest. After the butter is melted you'll get a creamy texture. If you want to put some greated cheese, now it's time.
7- Enjoy your creamy menemen. Afiyet olsun!

Man i dont want turks to be known as those who criticise anyone who cooks their food. What if one day no one cooks it? I love that he made menemen. Sure he didnt cook it like I would or my mother would but I still appreciate the love for our dishes.
I hope you make menemen too and enjoy it. I dont care if you add cheese or not. Do it. Cheese is great.
I personally add onion and garlic but a lot of turks dont. So why bash a non turk? If we cant agree on it how do we expect someone else to know better?
Menemen is meant to be a simple mans meal. Something a hard working man or women would make to feed the family. A hearty hefty and warming meal. Lets remember the essence of this dish and its simplicity.

I'm surprised that you gave so much correct information 😊 In most places in Turkey, cheese is not added to menemen, but especially in the type known as Çakallı menemen made in Samsun, cheese is added on top at the end. But I believe you can make it much better. You didn't mash the tomatoes enough (because your tomatoes weren't soft enough, we usually make menemen with soft tomatoes. Another reason is that you didn't use a proper masher) and you didn't stir the menemen after adding the cheese. What you said about the eggs is also true. They usually put only the yolk instead of the whole egg.

There are a lot of different versions and I like to change the recipe however I want too. With cheese, without cheese, onion or no onion, it's still amazing and you made it so beautifully that I am craving menemen at 01:20 AM.🤷🏻‍♀️

This is one way of making it. Here are some tips to level it up:
1- peel off the tomato skin
2- Add thinly sliced onions
3- Do not whisk the eggs before adding them in the pan, instead, crack the eggs into the pan, quickly whisk the whites without touching the yolk. Once the whites are mixed and mildly cooked, start mixing the yolks.
4- do not overcook the eggs for a better texture and taste

p.s: If you use only the egg yolks, it’s called Cakalli (a town) Menemeni which has a creamear texture. You can adjust the whole egg / egg yolk ratio as per your own taste

That's a beautiful menemen. Thanks for sharing this recipe. There are tons of different ways, with cheese, with onions, with sucuk, with butter or olive oil, endless possibilities... They're all menemen but made for your current mood and that's the thing of the menemen. 😬
