Porchetta is a specialty from the center of Italy, and it is really delicious!
You can be creative making it, BUT there is a limit! The first video made me feel sick, I had stomach ache watching that 🤢 they ruined everything using very poor quality ingredients!
The second one definitely made my mouth water 🤤 and that's why you shouldn't bastardize Italian recipes... 'cause if done in the right way you can have a very high quality end product!

I would love to see your fathers recipe using brandy in the Porchetta! sounds amazing! My family likes to put brandy, gin and whiskey with some of our slow cooked meats.

Hi Vincenzo. Sorry I’m late to the porchetta party! Italian seasoning is basically dried herbs mixed together in a bottle and sold. It consists of oregano, basil, marjoram, thyme, parsley 🌿. Nothing like fresh ingredients over dry if you have access to them in my opinion though. 😊

I'm so glad you can call out ridiculous recipes like this. Why do people have to add way too much to a recipe that has a great natural flavor. Less is more. This would hurt my stomach

Vincenzo, other than the obvious overload of crap the first guy put in there, he’s using the loin and not the belly and trimmed most of the skin off, so there wouldn’t be crackling anyway. I agree with everything you said… man, the Italian one… literally salivating

I made porchetta yesterday in the Webber rotisserie, it was the best pork crackling ever. We're having leftover pork meat tonight, unfortunately there's no crackling left

There is a place in Firenze, where they make the worlds best sandwiches. You can get one with porchetta, and its absolutly amazing!
