Quick tip for everyone is to niche down, it helps with competition.

I niched down to SaaS digital tool dashboards for workplaces for b2b startups and I have 3 real life projects and my portfolio which includes positive testimonials.

👎Downside is that you can't apply for just any UX position, which makes you search for that role you are niching down to.
👍But the upside is that if I apply for relevant position I am the first one they are reaching out and during the interview they try very hard to convince me to work for them sometimes even making the hiring process easier just for me.
