This is how I make cinematic street films, slow motion street videography. I find Sony the most reliable with this, Sony zve1 with any zeiss lens from 35mm-55mm. Nikon is pretty good at it too, but has worse stabe and slightly worse autofocus. Fuji is utterly unreliable, and never tried with Canon, I bet they'd be good. Panasonic has no autofocus in their slowest framerates, nor does OM System.

I use the Pocket 3 in full on stealth mode as follows: I hold it in my hand at arms length by my side as if I’m just walking. It’s facing forward like a flashlight and, I reset the gimbal. I just walk down the street and nobody looks at me twice. I have a very interesting view of life as it passes by. Nothing beats the Pocket 3 for stealth!

The wildlife for this guy was not wild enough so he went into the city started filming people.
It could literally be a comedy movie about the evolving of this guys art choices.

You can put your camera in a side bag with a hole for the lens and look at a monitor that you are holding. You will have perfect framing and completely stealth

I have tried to do your slow mo street videography style. The subject was never even in frame, or if it was, not in focus. Both Canon and Lumix suck! My technique sucked too. Women always knew what I was up to!

I understand why you don't want to/likely will never do it. But a small gimbal with the sony and a little lens, would let you set the horizon, and even tune the pan speed to match the people vs your movement. Basically with trial and error you could have perfect shots nearly every time ( I enjoy your shots those and arguably many are perfect). If you set it just right though, you can pretend your filming straight ahead or even angled slightly away from the people you really want to film, or even at the sky, ground, whatever, then click the mode, or whatever works on the specific gimbal to trigger it to a quick recenter and pan/ramp. Sounds complex, but really is simple once dialed in. Could could flick your wrist instead, but it would be more obvious than just the gimbal moving on its own.

Have you ever seen the Lone Wolf and Cub samurai series? The main character pushes his son around shogunate Japan in a battle ready death stroller. Maybe you can outfit something similar can outfit something similar with a camera for street video? With like an external monitor on the handle bars, and you can just like point the stroller at people passing by… they’ll never know.

Connect osmo to mobile phone and use it for seeing the frame. No depth of field whatsoever, everything in focus 👍🏻

I really like your idea for street videography, but I have an aversion to video editing for some reason. It seems so tedious compared to image editing. You mentioned Roman Fox. His stuff is really good. He does quite a lot with shadow/light play. Also, his edits are usually quite warm and dare I say "cinematic looking". One difference between your videos and most street photography is that the photographers tend to be more stopped down so more of the scene is in focus along with the subject. I think a bit wider lens would be something to try. A little more DOF and bit wider than 50mm to help with your no look framing technique. For the Fuji possibility: Wouldn't an X-S20 with maybe the XF27mm pancake or the XF16mm T1.4 be a good combo? You could also have a mini tripod attached to hold and use to pan instead of holding the lens. That might also be more discreet than holding the lens to pan. Just some thoughts.
