This recipe has an inordinate amount of sugar resulting in a sickly sweet desert masking the delicate pear flavor. To Chef Arrouze: Your presentation, articulation and elegance is second to none. Anyone including myself, is privileged to come across your site and watch such a professional. Excellent presentation and again, second to none.
May I respectfully suggest: Cutting the sugar exactly in half. Dipping the savoys 'briefly' in spirits, without the addition of syrup or water. Gently coat 'ripe' pears in lemon juice after pealing. Diced pears folded in only after removing any excess juice; paper towel, wooden board etc..
