KEY LIME PIE
Ingredients
For the Crust
4 tbsp unsalted butter melted, 56g
8.8 oz Ovaltine Cookies 1 package
For the Filling
14 ounces sweetened condensed milk ( had more can of milk for more sweetness)
2/3 cup key lime juice Fresh, 160mL
3 egg yolks
2 tsp lime zest of 2-3 key lime
Instructions
Heat oven to 350F. Add the cookies to a food processor and pulse until you have fine crumbs. Mix in the melted butter and pulse until combined. If you don't have a processor you can use a plastic bag and rolling pin to mash the cookies into crumbs, then just mix the crumbs and butter in a bowl
Dump the mixture into a 9" pie dish preferably a spring pan, then distribute and use a measuring cup or your fingers to press the crumbs firmly down.
Bake crust at 350F for 5-7 minutes.
Zest two limes and set aside then squeeze 2/3 cup of juice and strain out the seeds.
Add egg yolks and zest to the bowl and beat until fully incorporated.
Pour in the sweetened condensed milk and mix on medium until fully combined. Add in the key lime juice and continue mixing.
Pour the filling into the warm crust and give it a jiggle to level things out. Bake at 350F for about 15 minutes then cool on a wire rack for about 20 minutes and chill for at least 3-4 hours before serving.
Top the pie with whipped cream and serve.
