200g dried basmati rice
1 red onion, sliced
2 red peppers, finely sliced
4 skinless and boneless chicken breasts, diced
¼ Savoy cabbage, finely shredded
150g mangetout
225g can water chestnuts, drained and rinsed
4 spring onions, finely sliced

For the sauce:
4 tbsp soy sauce
Juice of 2 limes
2cm-piece fresh root ginger, peeled and grated
2 red chillies, 1 finely chopped, 1 finely sliced to serve
2 garlic cloves crushed

Cook the rice according to the pack instructions, drain and set aside.
Spray a large, non-stick wok or frying pan with low-calorie cooking spray and place over a medium-high heat. Add the onion and peppers, and stir-fry for 3-4 minutes. Add the chicken and cook for a further 3-4 minutes. Mix together all the ingredients for the sauce. When the chicken is nearly cooked, stir in the mangetout, chestnuts, half the spring onions and savoy cabbage and add the sauce to the pan. Stir-fry for a few minutes, then add the cooked rice and stir-fry everything together until the rice is piping hot. Scatter with the remaining spring onions and chilli and serve straight away.
