VEGAN BOSTON CREAM DOUGHNUTS (3 ways: traditional, baked, or airfryer!)

You can make VEGAN BOSTON CREAM DONUTS at home simply and easily! These are soft puffy doughnuts, covered with rich chocolate glaze and filled with smooth vanilla vegan pastry cream.
Welcome friends and not-yet-friends,
I'm sure you'll agree the most donut-y of doughnuts are deep-fried. But in this tutorial for Boston Cream Donuts, I'll include:
- how to make classic egg-free donut dough,
- how to make dairy-free Boston Cream filling,
- how to make rich allergen-friendly chocolate donut glaze,
- how to fry donuts the traditional way, but also
- how to bake Boston Cream Donuts in the oven, and
- how to make Boston Cream Donuts in the air fryer!
THE INSPIRATION
Back in the old days BEFORE Tim Horton's started trucking in frozen donuts, they used to make them all fresh in store. That's when I fell in love with Boston Cream Donuts. I still remember those soft puffy donuts, covered with chocolaty glaze and filled with smooth vanilla pastry cream.
The method for veganizing these donuts was fairly simple since classic donut dough doesn't really require dairy or eggs. Some recipes do, but I found it easy to replace the extra richness with flax seeds and coconut oil.
Veganizing the pastry cream was a little bit trickier. It took a few trials but once I got the formula down, vegan pastry cream is simple to make in practice.
Making chocolate donut glaze that hardens without getting brittle or melting to easily also required a few trials. Getting the ratio of each ingredient right is important for texture. But again, simple in practice once you have the recipe.
Then I knew I would get requests to bake these instead of frying. Personally, I think the fried version is going to take you right back to the donut shop and impress all your friends and family. But the baked and air fried versions are also surprisingly good!
